Obituary of Penny Lea Minnick

Penny Lea Minnick passed away Thursday, September 28, 2017 after surviving Stage 4 lung cancer a decade ago.  She was preceded in death by her parents, Arthur W. and Virginia Beck Jr.; and her God child, Scarlett Ancellotti.  Penny is survived by her husband of 45 years, Chris; and all of her God children and dear friends.

Penny graduated from Greenhill Preparatory High School and attended both Oklahoma University and SMU.  She met and married Chris in Dallas in 1972.  Later both worked for Regency Development and moved to San Francisco and later Houston.  In 1982 they started Coventry Development where she became active in and on the Boards of Allied Fairbanks Bank and the Chamber of Commerce.  She retired from daily activity at Coventry in 1988 and became a music composer and has written over 200 songs, many of which have appeared in various TV shows.  Penny was always active and dynamic whether it was business, music, tennis or golf.  Additionally, she started the Circle of Friends Charity which provided personalized and comfort items for cancer patients which included blankets, books, assorted 1950’s toys (slinky, etc.) as well as items blessed by Pope John Paul II.  The charity was closed after Penny could no longer contribute her time due to health problems. She was a true inspiration to everyone she encountered and will be greatly missed by all she knew.

A Memorial Service for Penny will be held Thursday, October 5, 2017 at 2:00 pm at Clayton Funeral Home, 5530 W. Broadway, Pearland, Texas 77581 with Pastor Keith Anderson officiating.
